Po przekonanaiu się, że produkt Y jest świetny, firma zaczeła go stosować w swoich urządzeniach do skrawania. Ale co z tym "running water"?

they are running - using - water-miscible cutting fluids - i.e., cutting fluids that mix with water. Asking about "running water" is a parsing error - water is part of the "water miscible" adjective of the "cutting fluid(s)" subject. Cutting fluid is the fluid than runs between the tool (drill for example) and the part being cut (drilled, milled, turned, etc.) to take away the heat produced during the cutting process.
