As freeze-dried coffee is a marginal improvement on powdered coffee, it is generally kept as easily recognisabe granules, rather than being ground to powder. For the purposes of a patent, it would be important to be accurate about whether or not this coffee was in powder or granule form (whatever marketing people might say, I believe that dried coffee is amorphous, not crystaline). Coffee powder is dehydrated and it contains oil. There isn't enough oil in it to prevent it from being a powder.
I still use 20-year old instant coffee jars as kitchen storage jars. That was the best thing about instant coffee, though it could be useful for cake-making.
