Puse los tres términos porque toda la frase es un conjunto. Pensé en "Agite (o revuelva), dé un sorbo y saboree", pero quisiera saber si hay unos términos más precisos en este campo de la enología.

agree  Andy Watkinson: Sin duda parece que "agitar" sí es el verbo utilizado para estos casos, pero qué lástima que no haya un término igual en español porque evidentemente "agitado" (Martini, stirred not shaken) no es lo mismo que "swirl".
