agree  philgoddard: Or set. And "flight" is not really necessary. http://dictionary.reverso.net/french-english/Consigne

disagree  Thomas Miles: If this altitude has not yet been reached, 'established' is likely to cause confusion.

agree  Thomas Miles: I find this clear, and only wish it was used in more earthly contexts instead of 'setpoint'.

agree  Jeffrey Probst: If it is the display for an autopilot (AFCS), "reference or setpoint" might be the more usual term (as the altitude has been pre-entered in the system), but I agree that "target" is a very clear term.

Set altitude (setpoint, reference?)

Explanation:
Target altitude makes sense to me...but...

Looking for docs available in EN/FR came up with several uses of 'Set altitude' in these patent translations:
https://patentscope.wipo.int/search/docs2/pct/WO2013014338/p... (FR)/ https://patentscope.wipo.int/search/docs2/pct/WO2013014338/p... (EN) (Para 3.2b)

https://patents.google.com/patent/WO2013079666A1/fr (FR)/ https://patents.google.com/patent/WO2013079666A1/en (EN) (Fig 6b explanation)

I also came across setpoint altitude (https://patents.google.com/patent/EP2613214B1 / https://patents.google.com/patent/US9563200B2/en) and reference altitude (https://patents.google.com/patent/EP0787095B1 / https://patents.google.com/patent/EP0787095B1/en)

Not sure if the google translations are machine produced or not, but the fact they translate with different terms makes me think there's some human intervention at least.

Finally, the user instructions for an autopilot give ' altitude hold
reference altitude', which makes sense in context, but is probably not easily transferable! (https://aeroclub-montpellier.org/wp-content/uploads/Notices_... page 4 FR, https://bkx.bendixking.com/downloads/006-18034-0000_3.pdf page 56 EN)
