Le terme "soldier course" se traduit généralement par "assise de briques en palissade", mais je n'ai rien trouvé d'aussi élégant pour "sailor course".

not an answer but a definition, which may help you or someone else find the right term :

The long sides are called stretchers, the ends headers, the tops and bottoms beds. When bricks are laid on beds with headers abutting, the stretchers are exposed and the row is a stretcher course. When they are laid on beds with stretchers abutting, the headers are exposed and the row is a header course. Bricks laid on stretchers form a rowlock stretcher course when headers abut, and a rowlock header course when beds abut.
