'cold cuts' could be OK as well but 'cold cuts' mean also this watery gelatine ham they sell in supermarkets, and that one is a "w�dlina nietrwa�a wysokowydajna"

you could use "cured meat", but are there any casings used for cured meats (like cured ham)?
on the other hand, the official UE CPV dictionary has "Sausage products" as "Produkty w�dliniarskie" which is OK in this context, and quite formal indeed

Casing is clearly right. The problem is what to do with 'wedliny'. 'Charcuterie' is probably about right (and is a lovely word to boot) but may be too obscure for the context. On the other hand, 'small meats' I never liked. In the context 'sausage' may do the job.
