Vegetales es una palabra que no se usa en España, donde se les llaman verduras (sinónimos). La RAE dice que las verduras son hortalizas, especialmente las de hojas verdes. Estoy de acuerdo que quizás no valga la pena hacer la distinción en inglés.

I think Margaret's is fine as an option but perhaps the word "produce" is not quite appropriate when talking about what is going into a salad.
hortaliza could suggest something fresh from a kitchen garden or allotment. There is really no straight distinction between vegetales and hortalizas, they are both synonymous. What are you going to get from the kitchen garden if not vegetables, lettuce and so on. So perhaps another way of handling it is to stress that the vegetables are from the kitchen garden.

No sé como comienza la oración, ofrezco esta sugerencia basándome en el comentario de más arriba. ¿Queda bien en tu contexto? Creo que la "base" aquí son la variedad de lechugas, lo propongo como una manera de abarcar todo lo que se le puede echar a una ensalada para que esté completa, no como traducción de lechuga (lettuce).
