I don't see why you've posted this as a question and then answered it in the last two words. Or am I misunderstanding something?
I think the idea is that these dishes are truly ridiculous: "any laughable offering" might do it. Like Neil, "cockamamie" leaves me (as a UK English speaker) rather perplexed.
Hi Phil, those are my attempts. "mamarrachadas" is a noun while "cockamamie" is an adjective. An adaptation has to be made. I found there was a previous example related to a painting: https://www.proz.com/kudoz/spanish-to-english/art-literary/417669-mamarrachada.html
It doesn't matter that the Spanish is a noun and the English is an adjective. The word is described in dictionaries as mainly US, but I think a lot of Brits would either understand it or work out its meaning from the context, and you need something unusual and exotic. Here's one fascinating suggestion as to its origin: http://www.worldwidewords.org/weirdwords/ww-coc1.htm Cockeyed is another possibility.
