medium wild langoustines
I would use the word "langoustines" for "cigalas". There appear to be some others (scampi, Norway lobster, Dublin Bay prawn), but "langoustines" is the word I´ve seen more often on menus. The langoustine (Nephrops norvegicus) is a saltwater crustacean, while the crayfish (ástaco, cangrejo de rio), if I am not mistaken, lives in freshwater.
"Terciadas" in spanish means "medium-sized".

I think that "de playa" in this context (meaning that the animals have been caught in the wild and not bred in captivity) can be translated safely by "wild".
