Cloud Cup
This is a suggestion, but I suggest asking the client for more information if it is for a printed menu that will be used for a long time instead of a conference menu or other one-off presentation. At least a flavor would be nice! Example: Dessert -

I don't know if the restaurant in Valencia was the one pointed out by Deborah, but that menu was so interesting that I've noted the website in my travel file.

: sounds like the restaurant's own creation... I can only find it in one online menu, from Valencia http://www.comarcarural.com/elmosset/lacarta.htm

Cheers from Zaragoza. I think that this will always be a "hope the waiter speaks English" name for a dessert! Have a good weekend.

Comment: "I suggested parfait to the agency and they were happy with that. I know it may not be what it is but they didnt know either. I guess I will have to dine at the restaurant to find out! Thank you all for your suggestions."

Light-as-a-cloud dessert
Given the lack of text there could be a range of possibilies. I would assume that it is a light dessert, perhaps a sort of floating island?

Cloud Nine Dessert
As I said in the discussion, it is extremely difficult to "translate" a fancy name without knowing the recipe, or at least the ingredients.
Moken's "Dream" suggestion sounds great, but do we know if there are marshmallows?
In case you cannot get hold of any details, I came up with the name I'm proposing and ... lo and behold! I find there is a dessert
with such a name, and it contains marshmallows! I am publishing it just as a curiosity. It would not matter if your "copa" is not the same, since this is, again, a fancy name, not an established dessert (like Eton mess, for instance).

Which is my point: It is a fancy name for a dessert served in a glass, not a specific one.
