Sensitivity and perception I take your point Sue. Sensory perception is subjective : culture, gender, age all play a part. A certain colour which I might desribe in a particular way may not "exist" in another culture. How that is tested for is important and data is classically collected by methods whicih are language dependent. The fact that there is no term to describe a particular colour in a particular culture does not mean that the people concerned are not perceiving it in the same way as I do. It means that they are not expressing their perception in the same way. A can of worms! Yes, there are cultural differences in the expression of what is perceived.

Please specify I'd love to see more context here. What level of understanding does your writer have and what about the target reader? What is the global context of the text? Last but not least, are you asking for help with "sensible"? The original, if I ma reaing this correctly, should read "LA sensibILITE". Further, sensibility in the context the vision and colour, without more specification, has little or no meaning.
Is your original a back-translation? The use of "peuple" here seems odd, particularly as variation between individuals in the context of sensory perception makes sense, saying that perception of colour varies from one people to another is odd... unless qualified further.

agree Leslie D : 'colour sensitive' can mean a medical condition whereby a person cannot see certain colours properly (usually white, they see black spots superimposed)
