Readying this pork roast for the oven takes less than 5 minutes. Serve slices with pan sauce on the first night, then use the leftovers for making other delicious meals later in the week (see related recipes at left).

Pan sauces are typically made from the brown bits (fond) left in a skillet after cooking a steak, fish filet, pork chop or chicken breast. This fond is a result of what are called the Mailliard reactions. These are a series for chemical changes, like caramelization is, but based on proteins instead of sugars. The fond is packed with refined and concentrated meat flavors - the perfect base for a savory sauce.

To prepare the Red Wine Pan Sauce
In a small sauce pan over medium heat, sauté shallots in olive oil 2-3 minutes or until tender. Set aside.
In the pan that was used to roast the lamb, drain off and discard all lamb fat and heat remaining cooked bits and liquid on top of stove over low flame.

Red wine jus
If I was to have this on my menu, I would use this term, it sounds more elegant than pan sauce and, I would expect the name ferrugem to come from it's colour, therefore I wouldn't use the term brown sauce. This term also has a very specific use for a cold, spicy sauce which is purchased pre-made like tomato sauce.
I have seen teo recipes for molho ferrugem and one has red wine and the other uses tomatoes for the colour. Your term would depend on the ingredients. If it doesn't have red wine, simply use "Jus".
