Discussion

Fernando Tognis May 21, 2013:
I agree with Helena You should check the animal. Goaty and lamb are more popular than pork in La Rioja
Helena Chavarria May 21, 2013:
What animal are the ribs from?

Spanish term (edited): "costillitas a la riojana"

pork chops Riojana style

Normally consists of two pork chops, a fried egg, peas, chips/french fries and sweet pepper. Quite a challenge.

neutral philgoddard : Sounds delicious! But you haven't given any references. //Sorry if I sound picky, but her reference says ribs.

Take my word for it, I have eaten plenty// or look at the photograph Taña has kindly provided//you don't just sound it// check dictionary for definition of chop "... adjacent and usually including a rib" OED, in case you doubted.// What, still neutral?
agree Taña Dalglish : Yep! http://southamericanfood.about.com/od/maincourses/r/Pork-Rib... (takes hours!). Un abrazo.
