The three-dimensional structures of close to thirty legume lectins are now known. They are dimers or tetramers of nearly superimposable subunits, each in the shape of a dome. The dome is formed largely of three β sheets: an antiparallel six-stranded back sheet that is almost flat, a concave seven-stranded front sheet and a smaller, five-stranded sheet that plays a major role in holding the two large sheets together. The majority of residues not included in the β structures are in loops and β bends that connect the strands of the β sheets. This topology is related to the β jelly roll (or Swiss roll) motif and is known as “the lectin fold”.
