@Sonia According to the information you've so kindly posted, the water has a high content of bicarbonate.

I think your first translation, 'water with medium mineralisation, rich in bicarbonate, sodium and fluoride', is fine.

The way you express it will depend on your context and purpose. For example, if it's for a label or a short heading, then something like"Medium mineralization, carbonated, sodium and fluorinated waters" should work.
However, if it's for a brochure for a spa or a medical treatment centre or similar, you might want to wax a little more lyrical.

I believe the text is talking about elements that are found in mineral water, so I would say "containing bicarbonate."
