No need to distinguish between banknotes and coins, as banknotes can be simply broken down into smaller banknotes. They don't necessarily need to be exchanged for coins. Also, someone may come into the bank with a large banknote and request it to be broken into both smaller notes and coins (troco). On the other hand, someone may come in with small banknotes and coins and ask for larger banknotes (destroco). So, 'cash exchange' would be a more simple way to refer to theses types of operations.
