agree Bourth : While the text quoted includes 'acoustique', that is not part of the question. I would omit 'composite', however, since 'system' says the same thing (and 'composite' might be taken to mean 'composite materials', of which there might be none).

neutral Tony M : Over-interpretation: this is probably only thermal insulation, but acoustic treatment. / 'Panels' is OK, since the use of 'complexe' strongly implies a composite panel.

Firstly, from the above (from the architect's site) it would seem your text should be "L'ossature bois est recouverte INTERIEUREMENT par une coque recélant les complexes isolants et acoustiques", though it also seems this 'coque' does not include thermal insulation ...

Secondly, what covers the structure externally is referred to in my quote above not as a 'coque' but as the 'double-peau', and this DOES have thermal insulation properties.

Thirdly, note that the acoustic component is to reduce disturbance to nearby residents, not to abate noise or improve sound quality within the structure.

Bref ... your text might be a journalistic mish-mash attempting to interpret and simplify archi-engineering texts and not quite getting it right. Another site says much the same as Wilmotte:
"Une attention particulière a été portée à la RÉDUCTION DES NUISANCES POUR LES RIVERAINS. Outre sa bonne intégration urbaine et paysagère, le Grand Palais Ephémère présente notamment des capacités très importantes D’ISOLATION PHONIQUE GRÂCE À LA DOUBLE PEAU QUI POSSÈDE DE FORTES VERTUS ACOUSTIQUES."

We also have "La DOUBLE PEAU que forment ces deux derniers éléments est à la fois belle et fonctionnelle, ISOLANT THERMIQUE COMME ACOUSTIQUE.'

I'd avoid words like 'panel' and 'composite' which might be misleadingly specific and go for 'thermal insulation SYSTEM' since the double skin (which comprises the thermal insulation) consists of timber, glass wool, and ETFE cushions:

"La forme "arquée" de la construction, économique et écologique, et sa double peau en bois, laine de verre et éthylène tétrafluoroéthylène possèdent d'importantes vertus thermiques, phoniques et de ventilation, réduisant les dépenses d'énergie."

It is a journalistic text and the target readership is general public, which doesn't exclude people interested in/knowledgeable about archi-engineering. I will read the Moniteur piece that Samuël kindly posted and have another think about the whole thing.

composite insulating and acoustic panels

Antyhing more than this amounts to risking over-interpretation.
The 'insulation' is alsmost certainly only thermal, while the 'acoustique' probably refers more to sound absorption, rather than insulation as such.
