I found the word "press-on fitting" in the paper regarding pipe joints and fittings.

It says that "compression or press-on fittings may be used."
I wonder what the difference between compression fitting and press-on fitting is.

I think your translation from German is incorrect, which may be confusing you: they are indeed 'press fittings' (with variants on that name used to designate specific proprietary types)

These are a comparatively new type of fitting, similar in concept to the push-in fittings used since re-usable plastic piping systems were introduced.

Compression fittings

These are quite different from press-fittings and you can easily find videos on the internet showing how they are made, but basically they use olives and nuts and sometimes jointing compound or PTF tape is put inside, which can seriously compromise their reliability and durability.
