Three reasons:

1. "To convert into" = transformer en (I convert water into ice by putting it in the fridge). "To convert from" is a different phrasal verb with a different meaning.

2. You've used the wrong object. What's being converted is not competition or competitors, but the competition's customers. This goes back to the definition of "business" (it's not a business or the business; it's business as an uncountable noun, meaning, in this context, the sales and the buyers of the competition).

3. Given the above 2 problems, what you've written has a completely different meaning to the original:

converting competition into our business = transformer la concurrence en notre entreprise (logically this doesn't make sense in either language, but that's what it means).

to convert business from competition = attirer la clientèle de nos concurrents (ou convertir les clients de nos compétiteurs à nos produits).

Entièrement d'accord avec polyglot. Ici, "business" désigne "la clientèle" ou "la part de marché" (les "ventes" de la concurrence dans un sens large) et on parle de s'attirer, de reprendre ou de rafler la clientèle/une part du marché de concurrents. J'éviterais toutefois les termes détourner/détournement qui renvoient souvent à une démarche déloyale sinon illicite (d'ailleurs interdite dans les ententes de confidentialité et certains contrats de travail). Je m'en tiendrais probablement à quelque chose comme:
Peut élaborer un [plan][programme] pour s'attirer la clientèle de concurrents.
Capable d'élaborer un plan visant à [arracher][reprendre][rafler] une part de marché à la concurrence.

Il y a aussi:
Peut élaborer un plan de démarchage concurrentiel - ce qui semble le terme approprié en marketing. Reste à vérifier si l'expression a "bonne presse"...
