may be a specific scame by a company calling itself Unbeatable Holidays
This may be a general expression, in which case I am not sure what the meaning is, but there is a company called unbeatable Holidays for which there are many Google references describing it as a scam.

I read it that the narrator had been attracted by an advertisement for an "unbeatable holiday", got caught out by what turned out to be a scam, and therefore subsequently had to find whatever he could at the last minute in order not to end up with no holiday at all.

I believe that the intent of the author of the (poorly constructed) sentence was to say this:
Due to booking a hotel room last-minute, and unfortunately during a holiday when travel is popular, (he) was only able to find and had to accept less-than-optimal accommodations.
Unbeatable translates to 'no other alternative'; that there was no choice but to settle on the sub-par/more expensive rooms still available.
The use of the word scam implies the author's disdain for the whole holiday situation of overbooked rooms and higher prices, perhaps with a perception that it is all some sort of conspiracy.
