Source text - English Hace 20 años nació Pujol y con él, la percepción mundial de la cocina mexicana. Llegaron los moles, los tacos y los mezcales. Pioneros en romper paradigmas en la restauración,
donde el sitio de honor se reserva a ingredientes y productores
por igual.
Dicen que no hay valiente sin miedo. Pocas cosas aterrorizan a un joven cocinero más que ver un restauran- te vacío durante un año. Hoy, la historia es otra, pero Enrique Olvera recuerda esa pesadilla como unos años lindos que for- jaron el carácter de Pujol, donde la autocrí- tica siempre está presente. Olvera asegura que ese duro periodo es uno de los componentes que los ha hecho permanecer vigentes a él y su equipo. Ellos se han encargado de explorar continuamente los ingredientes mexicanos de la mano de su productores, y han sido punta de lanza en demostrar ética y prácticas sostenibles en un entorno de fine dining. Dice mucho de una persona que sus colegas se desvivan en halagos hacia él cada vez que se menciona su nombre. Varios recuerdan noches épicas, cenas conmovedoras, largas pláticas y una alegría por vivir exorbitante. Muchos visitaron el restaurante que estaba en Petrarca, incluyendo el célebre chef francés Michel Bras, que Olvera confiesa es la persona a quien más le ha emocionado cocinarle. Si bien permanece el salón de 33 mesas –donde se sirve el menú degustación–, el equipo dejó hace muchos años de estar compuesto tan solo por siete personas. Translation - Spanish 20 years ago, Pujol was born, waking up the world to Mexican cuisine. Mole, tacos, and mezcal finally took the spotlight. When it comes to breaking paradigms in the restaurant industry, Pujol was a pioneer, honoring both ingredients and producers.
They say there is no courage without fear. Few things terrify a young cook more than seeing their restaurant sit empty for
a year. Today, it’s a different story, but Enrique Olvera remembers that nightmarish time as beautiful years that forged
the character of Pujol, where self-criticism is
always present. He credits that tough period as
one of the components that have kept him and his
team relevant. They’re not only tasked with continuously exploring Mexican ingredients from the hand
of their producers, but also with practicing ethics and sustainability in a fine-dining environment. It says a lot about a person when his colleagues go out of their way to compliment him at the mere mention of his name. Several recall epic nights, heartwarming dinners, long talks, and an irrepressible joie de vivre. Many visited the restaurant that used to be located on Petrarca street, including the famous French chef Michel Bras (Olvera confesses he’s never been more excited to cook for anyone). Although the 33-table dining room where the tasting menu is served still remains, the team is no longer composed of just seven people, and hasn’t been for many years. The new Pujol, located on Tennyson street, gives diners a glimpse of the chef and his obsessions, such as the color black, Japanese aesthetics, music (Olvera himself curates the playlists) and circles, which he says are a recurring theme in Mexico. At Pujol, circles are everywhere, from the decor to the dishes, the tortillas to the moles.
“Ideally, Pujol should outlive me,” Olvera says, reflecting on what’s next. “The future of the next few years is here in Mexico. I think we all have the right to have access to very good food, and I would like for Pujol to be that, somehow.”

Source text - English There’s nothing on TV.
No, really, where I grew up there actually wasn’t. I was born be-
hind the Iron Curtain, in Communist Czechoslovakia, in 1970. By the time I was a teenager, my choices for entertainment were—to put it mildly—bleak. Books were censored by the Office of Press and Information; we had only one newspaper, Rudé Právo, the official paper of the Communist Party; and the state controlled the radio, the airwaves, the cinemas, and the symphonies. It was illegal for a private company to print a publication or broadcast a signal. It was illegal to reproduce more than eleven printed copies of anything. And it was illegal for a band to perform without a license.
Faced with those options, I had only one choice: to get creative.
I obtained books through samizdat, the underground distribution network that began under Nazi occupation (1984 was an early favorite of mine). I bent the antenna of my transistor radio just so, in order to hear bands such as Bon Jovi, Scorpions, and Tears for Fears come in scrambled over the airwaves from West Germany. And if I was lucky, I would get my hands on a bootlegged VHS tape that friends of mine somehow managed to smuggle into the country.
I can still remember the first Western film I ever watched: The Terminator. But because there was no money for proper subtitling or dubbing into Czech, one person did the voice-over for every character in the film. It was, by any standard, a terrible viewing
experience. But it didn’t matter. My friends and I watched it three times in a row.
Today I look at my two teenage daughters and the ways they have to entertain themselves. I look at the limitless number of books they can read on their tablets (though they prefer hard copies from Amazon). I look at the thousands of outlets they can browse through on their phones to get news. I look at the millions of songs they can listen to on Spotify, the thousands of films and shows they can watch on Netflix, and the hundreds of channels they can lean back and watch on our satellite TV package. I look at all of that, and think about how their options for entertainment vastly outnumber those I had growing up. Hell, they vastly outnumber the options that kids growing up in America had just ten years ago. But even with an ocean of media before them, I see how they choose to spend a significant amount of their free time: watching YouTube.
In less than one generation, we’ve reached a point where what we watch, read, and listen to is no longer determined solely by states or corporate monopolies but by us. With the creation of YouTube, for the first time people were given access to free, instant, global distribution of video. While streaming services such as Netflix, Hulu, and Spotify have done an incredible job distributing traditional content in new ways, open platforms such as YouTube have changed who is able to produce, distribute, and consume media. All of a sudden anyone in the world could share a video with everyone in the world.
Over just one decade, that freedom has had far-ranging implications throughout the media industry. It has redefined what it means to be a celebrity and who can become one. It has thrust new people into the spotlight who understand that fame has changed. It has elevated the importance of engaging fans directly, rather than keeping them at a remove. And it has led to the emergence of a much more diverse and opinionated cast of stars who stand out from the inoffensive, inauthentic stars of previous generations.
That freedom has also altered our idea of what entertainment can be. It has unleashed entirely novel yet staggeringly popular genres of content, from beauty vlogging to video game commentary to unboxing videos. It has shrunk our world, exposing us to media from other countries that had long been hidden behind borders. And it has given billions of people the opportunity to watch videos based on their individual interests, rather than having to satisfy themselves with entertainment manufactured for the masses.
And that freedom has changed the rules of the industries that have been built to entertain and inform us. It has changed the way we watch the news, empowering citizen journalists from Ferguson to Syria to document injustice for the world to witness. It has helped elevate advertising into an art form, turning commercials into must-see clips. And it has resuscitated the music video, giving aspiring musicians a new way to break into the mainstream.
When I look at my life today, it couldn’t feel further away from my youth behind the Iron Curtain. I grew up dreaming of the West but got only an occasional uncensored glimpse of it. Now, as the chief business officer of YouTube, my job is to help bring information and entertainment to over a billion people around the world, including many in countries whose governments try to limit that ac- cess. And rather than offer a glimpse of the world, YouTube holds up a mirror to the entire human experience, reflecting all of our joys, all of our struggles, all of our news, and all of our history.
Today, 1.5 billion people turn to YouTube every single month to watch the largest library of video ever assembled whenever they want, wherever they want, on any device they want. Some come to watch the latest viral hit, music video, or late-night clip. Some come to catch up on news or sports. Some come to learn something new or indulge an interest. Some even come just to watch ads. But most people visit YouTube to watch something they can’t find anywhere else: a generation of auteurs and entertainers who have built their success on the platform, inspired by the challenge to share their creativity with the world.
I call these trailblazers streampunks.
I didn’t write this book to provide an origin story about YouTube. I didn’t write it to paint another corporate portrait of a Silicon Valley upstart that’s trying to “disrupt an industry” or “rewrite the rules.” I wrote it because I wanted to tell the story of an incredibly talented collection of creators and entrepreneurs who’ve used YouTube to do amazing things. Some of them draw audiences larger than those of hit TV shows. Some of them have built thriving businesses. But all of them together are fundamentally transforming how media works.
Through their stories, I hope to describe that transformation. I hope to highlight the tactics they’ve used to prosper. I hope to pro- vide an honest depiction of the difficult challenges they have faced along the way. And I hope to articulate what their success means for the future of media.
Above all, I hope I’m able to create something that connects with audiences, entertains them, and makes them feel part of a growing movement.
After all, streampunks do that every day.

No, en realidad, donde crecí no había. Nací detrás de la Cortina de
Hierro, en la Checoslovaquia Comunista, en 1970. Cuando era adolescente, mis opciones de entretenimiento eran — para decirlo con suavidad — sombrías.
Los libros fueron censurados por la Oficina de Prensa e Información; teníamos solamente un periódico, Rudé Právo, el pasquín oficial del Partido Comunista; y el Estado controlaba la radio, las ondas, los cines y las sinfonías. Era ilegal que una empresa privada imprimiera una publicación o emitiera una señal. Era ilegal reproducir más de once copias impresas de cualquier cosa. Y era ilegal que una banda actuara sin licencia.
Frente a esas opciones, sólo tenía una alternativa: ser creativo.
Obtuve los libros a través de samizdat, la red de distribución clandestina que comenzó bajo ocupación nazi (1984 era uno de mis primeros favoritos). Doblé la antena de mi radio de transistores para oír bandas como Bon Jovi, Scorpions, y Tears for Fears que venían mezcladas sobre las ondas de Alemania del Oeste. Todavía puedo recordar la primera película occidental que había visto: The Terminator. Veo las millones de canciones que pueden escuchar en Spotify; las miles de películas y programas que pueden ver en Netflix, y cómo se pueden recostar a ver los cientos de canales gracias nuestro paquete de televisión por satélite. Veo todo eso, y pienso en cómo sus opciones de entretenimiento superan en número a aquellas con las que yo había crecido. Caramba, superan en número las opciones con las que los niños que crecían en Estados Unidos tenían diez años atrás. Pero incluso con un océano de medios frente a ellas, veo cómo deciden pasar una cantidad significativa de su tiempo libre: viendo YouTube.
En menos de una generación, hemos llegado a un punto en el que lo que observamos, leemos y escuchamos ya no está determinado únicamente por Estados o monopolios corporativos sino por nosotros.
Con la creación de YouTube tenemos, por primera vez, la distribución gratuita, instantánea y global del video. Mientras que los servicios de streaming como Netflix, Hulu y Spotify han hecho un trabajo increíble distribuyendo contenido tradicional de nuevas formas, las plataformas abiertas como YouTube han cambiado quién es capaz de producir, distribuir y consumir medios. De repente cualquier persona en el mundo podría compartir un video con todos en el mundo.
A lo largo de una década, esa libertad ha tenido implicaciones de gran alcance en toda la industria mediática. Ha redefinido lo que significa ser una celebridad y quién puede convertirse en una. Ahora, como Director de Negocios de YouTube, mi trabajo es ayudar a traer información y entretenimiento a más de mil millones de personas en todo el mundo, incluyendo muchos en países cuyos gobiernos tratan de limitar ese acceso. Y en lugar de ofrecer una visión del mundo, YouTube es un espejo a toda la experiencia humana, reflejando nuestras alegrías, todas nuestras luchas, todas nuestras noticias, y toda nuestra historia.
Hoy en día, 1.5 mil millones de personas al mes voltean a YouTube para consultar la mayor biblioteca de video que se ha montado, cuando quieren, donde quieran, en cualquier dispositivo que deseen. Algunos vienen a ver el último golpe viral, video musical o clip de late-night. Algunos vienen a ponerse al día con noticias o deportes. Algunos vienen a aprender algo nuevo o satisfacer un interés. Algunos incluso vienen sólo para ver anuncios. Pero la mayoría de la gente visita YouTube para ver algo que no pueden encontrar en ningún otro lugar: una generación de autores y artistas que han construido su éxito en la plataforma, inspirados por el desafío de compartir su creatividad con el mundo.
Yo llamo a estos pioneros: streampunks.
No escribí este libro para relatar una historia del origen de YouTube. No lo escribí para pintar otro retrato corporativo de un comienzo de Silicon Valley que es "disruptor de una industria" o que trata de "reescribir las reglas". Lo escribí porque quería contar la historia de una colección increíblemente talentosa de creadores y emprendedores que han usado YouTube para hacer cosas increíbles. Algunos de ellos atraen a audiencias más grandes que las de los programas de televisión de mayor éxito. Algunos de ellos han construido negocios prósperos.
