I try to make it work by negotiating the deadline and/or finding some room in my schedule. It almost always works, but if I know for sure there is no way I can manage it (unrealistic volume in given circumstances), I politely explain I can't make it and decline.

There’s at least one customer I can’t say no; he is my longest-standing customer and pays like clockwork the day after receiving my invoice, so I’ll make it work.
