I try to make it work by negotiating the deadline and/or finding some room in my schedule. It almost always works, but if I know for sure there is no way I can manage it (unrealistic volume in given circumstances), I politely explain I can't make it and decline.

There’s at least one customer I can’t say no; he is my longest-standing customer and pays like clockwork the day after receiving my invoice, so I’ll make it work. My regulars know I’m always available for them, but obviously it depends on the job volume and deadline. The first step will be to negotiate, the second to refer to my very trusted colleague, the third to reluctantly decline. Anyway, my calendar hasn’t been full for some time…

I would never say no to a regular client. I would ask for an extended delay in delivery, but would not say no.
