according to this site you don't put the potatoes in the oven (to roast), hence "fried", however on other sites I have seen this translated as roast potatoes.

corar: Dar ou adquirir cor ou coloração mais intensa, mais viva, por algum processo físico ou químico (uso de pigmentos etc.) ou por pigmentação (no caso da pele). https://www.aulete.com.br/corar

I can't think of a word other than "golden" to describe "coradas" as in "batatas coradas".

Roasting has nothing to do with the cooking method, but rather with the time of exposure to heat:

roast: (v) cook (food, especially meat) by prolonged exposure to heat in an oven or over a fire. "she was going to roast a leg of lamb for Sunday dinner". "Oxford Languages Dictionary" and Google.

Under normal conditions, potato takes a relatively short time to cook. In order for potatoes to get "coradas" (golden roasted), they have to be in the oven or over a fire for a longer time.
