Dutch term or phrase: kap
The text reads:
I can't get away with translating "kap" with "roof" here, as the definition specifically excludes at least one type of roof, flat roofs, and maybe others I am not aware of.

piched roof
Explanation:
A pitched roof is a roof that slopes downwards, typically in two parts at an angle from a central ridge, but sometimes in one part, from one edge to another. The ‘pitch’ of a roof is its vertical rise divided by its horizontal span and is a measure of its steepness.

agree  Michael Beijer: since "kap" is defined as "een ruimte in een gebouw, die door tenminste een schuin dakschild is afgedekt", it is probably best to use "pitched roof structure". // makes sense!

-> Thank you, Michael. This would be a 'kapconstructie' (see joostdevree). The way I understood the question is that the asker wanted to know what you would call a 'non-flat roof' : 'Er moet sprake zijn van *een kap'. The definition was an 'add-on'.
