熟茶就是渥堆茶品。所谓渥堆是指一种制茶工序,当茶叶采收经过初制成为毛茶后,用人工的方法加速茶叶陈化的一种过程。一般而言,方法是在毛茶上洒水,促进茶叶酵素作用的进行,期间也有微生物参与发酵,待茶叶转化到一定的程度后,再摊开来 晾干。经过渥堆后的茶叶随着渥堆程度的差异,颜色已经由绿转黄,栗红,栗黑,在学术上被归类为黑茶类了。茶品渥不渥堆,从茶品的色泽条索,茶汤的色泽,叶底的弹性色泽茶滋口感等方面,都能区别。从茶叶来看,经过渥堆的茶叶条索,未冲泡前缺少光泽,冲泡时颜色深栗,冲泡后叶底缺乏弹性,颜色比较均匀一致。从茶汤的颜色来看,渥堆茶品汤色由栗到深栗色,明显比同时期的非渥堆茶品要深。从口感来看,渥堆茶品有一股特殊的渥堆熟香,茶汤一般较为柔顺,但是缺少层次变化,舌面无特殊渗透感觉,多试饮几次不不难区分了。渥堆也不轻重之分,也有人称为〈红水的程度〉,如果从同时期茶品的茶汤来看,渥堆程度越重,茶汤颜色就越深,反之则越浅。
